Rumaki

Then and now, this is, like, the ultimate cocktail party cocktail....

  • 12 chicken livers, halved (about 3/4 lb.)
  • 1/4 cup dry sherry
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons cooking oil
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon ground ginger
  • 1/4 cup water
  • 1 8 oz. can sliced water chestnuts, drained and halved
  • 12-14 slices of bacon, halved crosswise

Cut livers in half; quarter any extra-large livers. Combine sherry, soy sauce, brown sugar, oil garlic powder, ginger and waater, and pour over livers. Marinate the livers and water chestnuts for 4-24 hours in the refrigerator, turning occasionally.

Drain livers. Wrap 1 piece of liver and 1 piece of water chestnut with a piece of bacon, and secure with a wooden toothpick.

Place rumaki on a lightly greased broiler pan and broil about 10 minutes (or until livers are no longer pink), turning frequently.
